The aforementioned Co-Controllers inform that computer systems and software procedures responsible for the operation of this site acquire, during their normal operation, some personal data whose transmission is implicit in the use of Internet communication protocols.
This is information that is not collected to be associated with identified interested parties, but which by their very nature could, through processing and association with data held by third parties, allow users to be identified.
This category of data includes IP addresses or domain names of the computers used by users connecting to the site, the addresses in the Uniform Resource Identifier (URI) notation of the requested resources, the time of the request, the method used to submit the request to the server, the size of the file obtained in response, the numerical code indicating the status of the response given by the server (success, error, etc.) and other parameters relating to the operating system and the user's computer environment.
These data are used for the sole purpose of obtaining anonymous statistical information on the use of the site and to check its correct functioning.

Cookies set by this website
There are two, both technical, and neither requires consent:
- torciano_consent — this domain, 180 days. It stores the choice made in the banner (statistics yes or no, marketing yes or no), so it is not asked again on every visit.
- PHPSESSID — this domain, session only. It exists for people signing in to the management area: visitors never receive it.
Before consent is given
No other cookie is written and no third-party script is loaded. External content (chat, reviews, map) does not start: in its place a box explains which service it is and lets you decide whether to load it. The default consent state for statistics and marketing is denied, following Google Consent Mode.
After consent is given
The choice is split into two categories, and each one covers the following:
- Statistics — Google Analytics 4, loaded through Google Tag Manager, with the IP address anonymised. It tells us which pages are read, not who reads them.
- Marketing — Google Ads and the Meta Pixel, to measure advertising campaigns.
- External services inside the pages, which follow the same
choice: the Zendesk chat (which sets its own cookies, including
zclmidand_zprivacy), the Elfsight reviews widget, the TripAdvisor badge and Google Maps.
Measurement identifiers are switched on from the management panel: while they are empty, those services do not start even with consent given, and the banner is not shown.
Bookings
Bookings are completed on Passepartout Cloud
(booking.passepartout.cloud), an external site that opens in a new tab. Any
cookies it sets are its own and its own policies apply: this website neither
reads nor writes them.
Record of choices
When someone accepts or refuses, the site records the date, the choice for each category and where it came from (banner or preferences panel). The IP address is not kept in clear text: only a non-reversible fingerprint is stored, used solely to show that consent was collected. The record deletes itself after 180 days.
Changing your mind
At the bottom of every page there is a “Cookie settings” link: it reopens the panel and lets you accept or withdraw each category at any time. Withdrawing does not delete cookies already set by external services: those are removed from the browser settings, as explained above.
Services mentioned above that are not used here
The co-controllers’ document also lists Yandex Metrica and Facebook widgets: they are not installed on this website. Links to social profiles are ordinary links, and send nothing until they are opened.
